Burger: Marinate the chicken in olive oil, wine vinegar, Cajun seasoning, splash soy sauce.
Grill chicken (we used our out door grill) and baste chicken with same marinade sauce as it cooks.
Sauce: mayo, ketchup, wine vinegar, 2 tablespoons Cajun seasoning, something sweet (like sugar, honey, stevia)
Coleslaw:
several cups of chopped sliced cabbage, couple grated carrots, red wine vinegar, olive oil, salt, thyme, and something sweet. (Just barely enough oil and vinegar to coat. Like 1/4-1/3 cup with 5-6 cups cabbage) Optional: some finely chopped or shreddedred onion or green onion.
Serve with, whole wheat rolls toasted on thegrill, burger toppings and use the coleslaw as a side AND on the chicken sandwich!
We also grilled some veggie shish kabobs as well! Peppers, mushrooms, and red onion. coated with olive oil, salt, and pepper.
