Ingredients:
12 eggs
1-2 bunches asparagus
Parsley optional
1 cup or more plain yogurt, cottage cheese, or ricotta
1-2 teaspoons seasoned salt of your choice
3/4 stick butter or oil of choice
1/4-1/2 c chopped onion (half)
1 cup or more grated sharp cheddar cheese, gruyere, parmesan
Directions:
Melt butter and lightly sauté onion in large pan.
Grease a two-quart casserole dish.
Beat eggs, yogurt, and salt together.
Add chopped asparagus to pan.
Mix in chopped parsley.
Add egg mixture into pan and lightly stir to blend ingredients.
Pour into casserole dish. Sprinkle over and mix in grated cheese.
Bake at 350 degrees for approximately 35 minutes or until knife comes out clean when inserted.
Serves 6-8
