French Onion Soup
4 large onions
2 T sunflower and/or olive oil
2T butter
3 3/4 vegetable stock
Salt and peper
Saute onions in oil and butter. Reduce heat to low and cook for 45-60mins, stirring frequently toward the end. When the onions are a deep brown color, add the brothand cook for another 30mins.
Serve with toasted french bread and shredded gruyere or cheddar.
