Chickpea Salad:
2 cans of chickpeas
1 red pepper, chopped
1 red onion, minced
3 avocado, cubed
2 mangos, cubed
2 jalapeño peppers, finely chopped
1 teaspoon cinnamon
2 tablespoons honey
3 tablespoons balsamic vinegar
3 tablespoons olive oil
1 clove garlic
Salt and pepper to taste
1. Mix all chickpeas, avocado, red pepper, red onion, mango, and jalapeño peppers in a large bowl.
2. Mix cinnamon, honey, balsamic vinegar, olive oil, garlic, salt, and pepper in a small bowl. Drizzle over salad and serve.
