1. Broil your tomatoes for about 25-45 mins - Take 3/4 of yourtomatoes and cut them in half and place them on a baking sheet with some olive oil, salt, and a bit of cayenne pepper. Roughly fill a baking sheet.Along with the tomatoes, roast 4+ cloves of garlic in the skin, sliced hot peppers (optional), and a carrot or two (optional).
(Roast the whole garlic head if you want, roasted garlic is just delicious to eat--like candy!)
2. Add roasted tomatoes, garlic, peppers, and juice from the bakingsheet into a blender along with your reserved raw tomatoes, a scoop of tomato paste (optional), 1/4 cup of olive oil (optional, especially if you used plenty on the baking sheet), and fresh herbs. (A large handfull of basil, cilantro, or both etc.)
3. Optional - strain to desired consistency.
4. Optional - Finely chop a cold cucumber to garnish and sour cream, yogurt, cream, or milk.
