1-2 bunches of Kale, roll the leaves and slice very thin
1 lemon or vinegar or choice
Olive oil
Salt and pepper
Make any salad youwant with this lettuce base. Here are some ideas, mix and match!
Shredded carrots
Red cabbage
Bell peppers
Red onion
Apples
Olives
Avocado
Raisins
Nuts
Toss all together and serve. Keeps in the fridge for days.
Optional: Massage the kale with half the salt, lemon, and oil for a minute or two. This will make the kale wilt slightly and will soften the leaves a little.
