Saute under cooked Ramen (no season packet) with sesmee oil, zuccini, fish sauce, and splash of soy sauce at the end. Combine with chopped cilantro, cucumber, and red onion in rice or lettuce wraps.
Dip in peanut sauce. (Peanut butter, coconut milk/other milk/water, soy sauce, sweetener)
If you have left overs, mix it all together and mix with the peanut sauce and refrigerate. It makes a fabulous cold noodle salad!
Traditionally, you use fine rice noodles or bean thread in place of the ramen.
