Big stock pot batch:
1-2 cans pumpkin or 1 med/large fresh roasted. (Smaller outlines will have smoother flavor). Or cubbed raw pumpkin.
Very roughy chopped, the soup will be blended:
2 onions
8 garlic cloves
3 T curry powder
4-8 T olive oil
Optional:
1 C white wine
2+ Tmolasses
2+ T sugar or honey
2 bay leaves
3 lemon preserve wedges
1-2 sticks Butter
Sauté all above until translucent and aromatic.
Add 8 cups broth and
2 T salt
Optional: white pepper or crushed pepper or redpepper flakes
After well boiled and pumpkin is soft, blend!
At the end stir in your cream of choice or mix of below. About 4 cups:
Milk, half and half or cream
Coconut milk
Blended cashews
Oat milk or oat milk powder for extra creamy and sweet
Blended tofu with a little water
Finish with 2-4 T lime juice (or lemon)
Salt and pepper to taste
Serve with a dollop of sour cream or Greek yogurt and fresh parsley or other green herb. And friend onions pieces if you have them.
