Sunshine Sauce
Makes enough for 2 people to dip a serving ofglorious grilled meat and some veggies.
Ingredients:
2 tablespoons lime juice (about 2 limes)
1 clove garlic (about 1 teaspoon)
1/4-1/2 teaspoon crushed red pepper flakes
1/4-1/2 teaspoon salt
1-2 tablespoon coconut aminos
1/4 teaspoon powdered ginger
1/2 teaspoon rice vinegar
1/4 cup sunflower seed butter (or almond, peanut)
dash ground cayenne pepper (optional)
1/4 cup coconut milk
(1/4-1/2 cup water for a sauce instead of a dip)
Directions:
1. Place all the ingredients except the coconut milk in the bowl of a food processor and whirl until well blended. Add water if making a sauce.
2. Scrape down the sides of the bowl with a rubber scraper, then add the coconut milk. Process until it’s blended and smooth. Store covered in the fridge.
Serve in place of peanut sauce on chicken, veggies,asian stir fry, or just a party dip.
