Crockpot Chicken and Beets (and Salad!)

Event Description

Brush clean beets and cut of stems and tips, but leave a little nub on each end. Place in crockpot.
Prepare whole chicken as desired and place over beets.
Sprinkle with a little water.
Turn on low for 4-6 hours.
Done! Seriously that easy.

Notes:
Chicken: Rubbed mine in an Italian seasoning and salt, Put a whole head of garlic in the center and threw in the gibbets with the beets.

The more water you use the more beet, chicken au jus you will have, the less, the more flavor will be retained inthe beets and chicken. The au jus is delicious! Use as broth base, in place of water in your next grain dish or sauteed veggies, or as a sandwich dip.

I try to make mine over night. In the morning I make a beet chicken salad!
Salad: Greens, beets, chicken, artichoke hearts, green onion, sunflower seeds, raisins, freeze dried peas for crunch. Scissor chop!

Serve chicken and beets together with couscous, rice, or greens. Separately, or together, make chicken or beet salad for side dishes or sandwiches.
