Cilantro Caesar Dressing
1 Can Sardines or Anchovies
1/2 CYogurt
1/2 C Light Vinegar, Spicy Pickle Brine, Lemon, and/or Lime Juice
1/4 C Parmesan or Cojita Cheese
1 C+ Cilantro, stems included
Salt and Pepper to taste (less salt if using anchovies)
Optional:
Jalapeño
1 teaspoon Mustard, like Dijon or spicy brown
1 teaspoon Worcestershire sauce
Blend all together.
Serve generously over a salad. E.g. Romaine, kale, zucchini, cucumber, scallions, dried peas or croutons.
