Saute 2 small onions and 4 garlic cloves in 4-6 tbls coconut oil and/or olive oil. Add two chopped carrots. Season with 2-3 tbls curry ora combination of: onion powder, garlic powder, turmeric, cumin, coriander, cayenne, ginger, cinnamon, clove (lesser amounts as you go throughthe list). Salt and crushed red pepper to taste. Add 3 cans pumpkin puree, 2 cans coconut milk, 2 cartons broth, and 4 dates or some apples/apple sauce for sweetness. Simmer for 20-30mins. Puree and serve.
