Alice's Simple Kale Salad – 2-4 Servings (depending on how much of a salad eater you are)
•One bunch green or red kale
•Whatever else you like in a salad
•For protein you can add grilled chicken, chickpeas and/or sunflower seeds.
•Rip kale leaves off of stem into bite-size pieces into a big bowl.
•Add 1 TBSP of sea salt. (The sea salt takes the bitterness out of kale.)Massage into kale.
•Add enough olive oil until kale is covered. Use spoonto mix around.
•Add another touch of sea salt. Massage kale again.
•Chopup veggies, add to bowl.
•Add balsamic vinegar. Mix with spoon.
•Add one last touch of sea salt to taste, massage gently (as to not smush the leaves), and voila! Simple greens.
