Caitlin's Roasted Rhubarb Salad
2 cups rhubarb sliced/cubed
Honey or sugar to coat and then let the rhubarb sit about 10-15 mins
Bake rhubarb at 450 for about 5-10mins or until soft and then let cool.
Mixthe cooled rhubarb with salad ingredients:
Leafy Greens like spring mix or spinach
Optional veggies, like Jerusalem artichoke and White radish
Goat cheese or Feta
Pecans or Walnuts
Balsamic Vinegar and Olive Oil with some garlic or shallot
