Event Description

Cut potatoes, carrots, turnips, etc into roughly similar 1-2 inch pieces. Coat with 1-2 tbls olive oil, cider vinegar, and coarse salt to taste. (I used flavored seasoned salt).

Roast in 350 degree F oven for 45min. Stir and toss 2-3 times.

Serve along side any protein, salad, etc or enjoy in its own! I served with chick pea broccoli slaw.
