Quick/easy reference to Farro Risotto:
-toast some chopped almonds
-1.5 c farro - soak in 4 c water for 30min
-meanwhile, heat 8-9 c of chicken broth
-melt 3 tbsp butter & 5 tbsp oil in pan, sautee 1-2 chopped red onion w/ plenty salt, 2 min
-add drained farro, cook... add 2/3 c white wine, cook ~2min until absorbed
-begin adding 1/2-1c of broth at a time, letting it absorb before adding more... until done! Add good amount of salt/pepper
-turn off heat, mix in 1c feta... sprinkle in some cranberries & fresh, chopped parsley, then sprinkle on chopped almond/parsley to serve prettily.
