6# ground beef
12# ground potatoes
1-1/2# ground onions
4 tsp. pepper
18" long lengths
Soak casings overnight in water. Grind potatoes & onions together. Mix with remaining ingredients thoroughly. Fill casings. Bring water to a boil and turn down to simmer. Simmer sausage about one hour until done. You can prick the lengths with a fork to prevent bursting.
Note: We probably doubled the onion and added more pepper, but don't remember how much...I taste it until I like the flavor. We get the casings in the grocery store around the holidays, but you could probably ask a butcher at any time...I'm so glad you want to carry on the tradition!
