Peaches and Cream Overnight Oats (Chilled)
1 serving old-fashioned oats
1 cup water
1 medium peach, pitted and diced
pinch of cinnamon
1 C yogurt
Stevia & salt to taste
Spoonful of nut butter (your choice. I quite like almond or cashew with this, but pecan would be fantastic, not to mention very Southern)
A touch of fresh ginger, grated
The night before, cook the oats and water until boiling, about 2.5 minutes. Add the diced peach and cinnamon and cook 2.5 minutes longer, until the juices in the fruit release and the oats are cooked. Cool to room temp and put the bowl in the refrigerator overnight.
In the morning, add the yogurt, vanilla, maple, ginger, stevia, and salt and mix well, but gently. Put it back in the refrigerator to blend the flavors and chill the mixture a bit more.
When you’re ready to eat, add an enormous spoonful of your favorite nut butter and digin.
