Mushroom, Spinach, Broccoli Bread Pudding
Modeled after Barbara Kingsolver's Asparagus and Morel Bread Pudding (find in May).
Bread, milk, eggs, cheese, veggies, butter/oil, seasoning
Half to full loaf of old bread. Ours was about to go bad--so this how we used it up. We toasted each slice because it still had some moisture.
Warm 2-3 cups of milk, we used rice milk
Saute some onion, garlic, and fresh chopped sage with butter or olive oil, when soft add to warming milk. You can also use any fresh or dried herbs here.
In the same buttered pan saute mushrooms and broccoli with some more butter/oil.
Rip bread into small pieces intoa oiled baking dish. Pour the milk over the bread. Sprinkle about a cup ortwo of mozzarella cheese over the bread, add handfuls of fresh spinach and add the sauted veggies. Beat 3-4 eggs and pour over whole pan, mix all together in the pan. Top with more cheese and grated parmesan.
Bake at 350 degrees for 45 mins
