Mashed Cauliflower, just like potatoes

Yield: Serves 4
1 head (1 3/4 pounds) cauliflower, roughly chopped
1 cup water or chicken stock
1-3 cloves garlic
Salt and freshly ground pepper
Optional: Coconut flour
Combine cauliflower and water or stock in a medium saucepan, and bring to a boil over high heat. Reduce heat to a simmer, and cookuntil cauliflower is very tender, about 10 minutes.
Using a slotted spoon, transfer cauliflower to a food processor. Add garlic and puree until smooth, adding 1 to 2 tablespoons cooking liquid. Add olive oil, and process 5 to 10 seconds more. Add coconut flour if your mixture is too wet or to thicken to preferred consistency. Season with salt and pepper. Serve hot.
