1-2 eggs and tortillas per person
Picco de Gallo (Oryour choice of salsa)
Beans, re-fried or black beans (if you do black beans, saute them with a little onion and optional cilantro, chili powder, and/or some cream cheese)
Cheese (optional) (Cheddar, fresh, cotija, etc.)
Sour cream or plain yogurt (optional)
Warm the re-fried beans or saute your black beans with onion and spices. Heat tortillas on a dry or lightly oiled skillet. Fry your eggs the way you want them. Spread the beans on the tortilla on your plate, add your egg, top with picco de gallo, sliced avocado, and optional cheeses. Salt and pepper to taste.
