Wash beets and cover loosely in foil. Bake in oven for 45 - 75 mins (45 for small beets, 75 for the huge ones). Then throw them in a paper or plastic bag and store in fridge until ready to use.
Throw the following in a food processor and you're ready to go!
1 large beet - cooked, peeled, cut into large chunks
1 clove garlic, peeled
2 tablespoons balsamic vinegar
4 tablespoons walnuts or almonds or your fave nut
6 tablespoons olive oil or a blend of olilve and a nut oil
Salt, to taste
