Saute 1 sliced and halved eggplant with olive oil and some course salt for about 10 mins. Add some chopped basil, 2 sliced and halved zucchinis, and some greens like beet greens. Toast some bread and spread with goat cheese. Lay a few basil leaves on the cheese and top with sauteed veggies (open faced). Voila! So delicious.
