Asparagus Bacon Salad. This is a spin off the classic deli broccoli salad:
Cook 6-8 bacon strips. Pour off all grease and reserve for any future sautéing. Let bacon cool.
Blanch or briefly sauté, a bunch chopped asparagus. I do two batches, first the ends, and then I barley cookthe tips at all. I cooked mine in a the bacon greased pan. Let cool.
Chop bacon into bits. Add to a bowl with asparagus.
Toss in a handful of raisins or chopped prunes and sunflower seeds or slivered almonds.
Mix in twolarge dollops plain yogurt or Greek yogurt.
Optional, sweeten to taste with maple syrup, honey, or stevia.
Voila! Graduation buffet crowd pleaser.
