Monkfish, Purslane, and Apricot Fennel Salad

Event Description

Monkfish--poor mans lobster--was delicious! Cooked with butter, garlic, fennel greens, lemon juice, salt and pepper.

Purslane, wejust threw this in with the fish to saute and cook down. You could use spinach or other braising green.

Salad:
Greens/Lettuce, fresh apricots,thinly sliced fennel bulb and a few chopped greens with a white balsamic vinaigrette and olive oil.

I think you can add more to the salad, but would be optional. We had some yellow summer squash, fresh beets thinly sliced, and some almonds that we added.
